Baked Bean and veggie stir-fry
Ingredients:
- 1 can of baked beans
- 1 bell pepper, chopped
- 1 onion, sliced
- 1 courgette, chopped
- 1 tablespoon olive oil (or any other vegetable oil)
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pan over medium heat.
- Add the onion and bell pepper, and sauté until soft.
- Add the courgette and cook until tender.
- Stir in the baked beans and cook until heated through.
- Season with salt and pepper to taste.
- Serve as a main dish or a side.
Baked bean shepherd’s pie:
Ingredients:
- 1 can of baked beans
- 4 potatoes, peeled and boiled
- 1 cup of mixed vegetables (peas, carrots, sweetcorn)
- 1/2 cup of grated cheese
- 1 tablespoon butter
- Salt and pepper to taste
Instructions:
- Preheat the oven to 190°C.
- Mash the boiled potatoes with butter, salt, and pepper.
- Spread the baked beans in the bottom of a baking dish.
- Layer the mixed vegetables over the beans.
- Spread the mashed potatoes over the vegetables.
- Sprinkle grated cheese on top.
- Bake for 20-25 minutes, or until the top is golden brown.
- Serve hot and enjoy!
Sweet baked bean brownies recipe
Ingredients:
- 1 can (400g) of baked beans, drained and rinsed
- 1/2 cup (100g) of unsweetened cocoa powder
- 1 cup (200g) of granulated sugar
- 1/2 cup (120ml) of vegetable oil
- 1 teaspoon of vanilla extract
- 3 large eggs
- 1 cup (125g) of all-purpose flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1/2 cup (90g) of chocolate chips (optional)
Instructions:
- Preheat your oven to 175°C.
- Drain and rinse the baked beans thoroughly. Puree the beans in a blender or food processor until smooth.
- In a large mixing bowl, combine the pureed beans, cocoa powder, sugar, vegetable oil, and vanilla extract. Mix until well blended.
- Add the eggs to the mixture one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
- If using, fold in the chocolate chips until evenly distributed.
- Pour the batter into a greased and floured 8×8-inch baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow the brownies to cool in the baking dish before cutting into squares.
- Serve and enjoy!
