1. Classic Spaghetti Aglio e Olio
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook spaghetti according to package instructions. Reserve a cup of pasta water before draining.
- In a large pan, heat olive oil over medium heat. Add sliced garlic and red pepper flakes. Sauté until garlic is golden but not browned.
- Add cooked spaghetti to the pan, toss well to coat in the garlic-infused oil. If needed, add a bit of reserved pasta water to create a light sauce.
- Season with salt and black pepper. Garnish with fresh parsley. Serve immediately.
2. Spaghetti Carbonara
Ingredients:
- 200g spaghetti
- 100g pancetta or bacon, diced
- 2 large eggs
- 1 cup grated Parmesan cheese (Swap for other grated cheeses)
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook spaghetti according to package instructions. Reserve a cup of pasta water before draining.
- In a separate pan, cook diced pancetta or bacon until crispy. Add minced garlic and sauté for a minute.
- In a bowl, whisk together eggs and grated Parmesan cheese.
- Add the cooked spaghetti to the pan with pancetta. Toss well.
- Remove the pan from heat and quickly stir in the egg and cheese mixture. The heat from the pasta will create a creamy sauce.
- Season with salt and black pepper. Garnish with fresh parsley. Serve immediately.
3. Spaghetti with Tomato Sauce
Ingredients:
- 200g spaghetti
- 1 can (400g) crushed tomatoes
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Grated Parmesan cheese (optional and can be swapped for other grated cheeses)
Instructions:
- Cook spaghetti according to package instructions.
- In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add crushed tomatoes, oregano, and basil to the saucepan. Simmer for about 15-20 minutes, stirring occasionally.
- Season the sauce with salt and black pepper to taste.
- Toss the cooked spaghetti in the tomato sauce until well coated.
- Serve with grated Parmesan cheese if desired.
